Seafood Rice

Seafood Rice: A Jewel of Portuguese Gastronomy

Seafood rice is one of the most emblematic dishes of Portuguese cuisine, celebrated for its rich flavor, unmistakable aroma and connection to the best that the sea has to offer.

This dish, which combines tradition, freshness and the unique touch of our cuisine, is a true experience for the senses and a must-try for anyone visiting Portugal.

The Origin of Seafood Rice

Although it is difficult to pinpoint its exact origin, seafood rice was born in the coastal regions of Portugal, where fresh seafood was abundant and easily accessible.

This dish reflects the essence of Portuguese cuisine: taking advantage of the best that the sea has to offer and transforming it into meals full of flavor and simplicity.

Seafood rice became famous in the Silver Coast region, in places such as Marinha Grande and Praia da Vieira.

Over time, it became a national classic, served both in traditional restaurants and on special occasions in Portuguese homes.

The Ingredients That Make the Difference

The secret to a good seafood rice dish lies in the quality and freshness of the ingredients.
The base of the dish includes:
• Various seafood: Clams, Shrimp, Mussels, Crayfish and, in some versions, Crab or Lobster.

• Carolino rice: The ideal rice for this dish, which absorbs the flavors of the broth and gains a creamy texture.

• Seafood broth: Made from shrimp shells and heads, it is the heart of the dish, ensuring a deep and authentic flavor.

• Traditional aromas: Garlic, Onion, ripe Tomatoes and Peppers are the basic ingredients, enriched with Olive Oil, White Wine, fresh Coriander and, in some recipes, a touch of Chili to enhance the flavors.

The Preparation Process
Seafood rice is prepared in stages, starting with the broth, which concentrates all the flavor of the seafood. This broth is gradually added to the rice, allowing it to absorb the flavors evenly.
The seafood is added almost at the end, to prevent it from overcooking, preserving its texture and succulence.
The result is a creamy, fragrant rice full of generous pieces of seafood, which will win over any lover of good food.
How to Serve and Enjoy
Seafood rice is traditionally served in a large pot or platter, ideal for sharing. The dish is garnished with fresh coriander, which adds an aromatic and visual touch.
To accompany it, a fresh white wine or a vinho verde are the perfect choices, balancing the intense flavors of the dish. Don’t forget fresh bread to soak up the last traces of the broth, because no one wants to waste a single drop!
