Preparation
1. Pork in Alguidar:
The pork is marinated for several hours (or overnight) in a mixture of garlic, paprika, bay leaves, white wine and salt.
It is then slowly fried in lard or olive oil, giving it a soft texture and an irresistible flavor.
2. Asparagus Migas: The bread is soaked in water to soften.
Meanwhile, the wild asparagus is sautéed in olive oil with garlic.
The softened bread is then added to the pan and stirred until it forms a uniform, golden and flavorful dough.
How to Serve
Asparagus Migas with Alguidar Meat are traditionally served on platters, with the migas shaped into cylindrical shapes or in small mounds, accompanied by the succulent pork.
